What my shop offers: products, bookings, events

When you create a shop you choose what you offer your customers: products, bookings, events — one or several together. You change the choice in Settings → "What your shop offers". When you choose "Bookings", the booking calendar opens at once with default working hours; you change the hours later in Bookings → "Hours and rules". When you remove "Bookings", the calendar switches off and the shop stops taking new bookings. The menu shows "Bookings", "Events" and "Gift cards" only for what the shop offers. A screen stays while the shop still has upcoming bookings or events, so existing data is never hidden. The AI assistant explains this and points you to Settings; it does not change the choice itself (AI tools that set up bookings and events come later).
